High Protein Organic Breakfast Frittata


1 small chopped onion

1 cup chopped mushrooms

1 cup of raw spinach

1 cup of chopped tomatoes

8 organic eggs whisked

1 scoop of The Good Stuff Whey

A pinch of rosemary

Sea salt & pepper to taste

The Good Stuff Coconut Oil

This yummy frittata is a great way to start the day, we love having left overs slices as a mid afternoon snack.



Fry the onions in coconut oil for a few minutes and then add the mushrooms and tomatoes.

Meanwhile mix together the eggs, whey, rosemary, salt & pepper and stir through the spinach.

Add the egg mix to the pan, cook for 5 minutes on a medium heat & put under the grill for a couple of minutes to cook the top.

Cut into quarters and enjoy.
