Organic Rocky Road Bites
1 cup of pumpkin seeds
½ cup dried apricots chopped
½ cup buckwheat groats
¼ cup local honey
¼ cup melted The Good Stuff Coconut Oil
½ cup dark vegan chocolate
Pinch of sea salt
Such a delicious snack, a healthy twist on an old favourite.
Gently toast buckwheat groats in a pan on a low heat for 5 minutes.
Melt chocolate in a bowl and add honey and coconut oil.
Mix the rest of the ingredients together.
Pour the chocolate mixture over the dried ingredients and put into a greased baking tray.
Put into the fridge for a couple of hours
Remove from the fridge & cut into squares.
