Gluten Free Banana Bread
1/4 Cup Almond Milk
1 Cup Gluten Free Oats
1 Cup Mashed Banana
2 Beaten Eggs
1 Tbs Gluten Free Baking Powder
1 Cup Ground Almonds
3 Tbs Date Nectar
1/3 cup Melted Good Stuff Coconut Oil
Pinch Himalayan Salt
1Tsp Vanilla Extract
Preheat oven to Gas Mark 4
To a bowl add all the dry ingredients and give it a good mix.
Then add the mashed banana, date nectar, beaten eggs and vanilla. Mix until all is combined.
Add the coconut oil and milk and continue mixing.
Grease a loaf pan. Then pour the mix into it.
Place in the oven for 50-60 minutes until risen and golden brown. Test to see if it’s cooked by inserting knife or skewer if it comes out clean take out of the oven and allow to cool.
Once completely cool slice and serve. Serves 9 Slices
