Courgette, Cheddar and Jalapeno Loaf

Ingredients

2 cups of grated courgette

3 tbsp The Good Stuff Coconut Flour

2 cups of grated cheddar cheese

4 eggs

1 tsp paprika

2 tbsp olive oil

1 tsp baking powder

3 grated jalapeños

salt and pepper

 

This savoury loaf is so tasty for lunch or with a bowl of soup for dinner, it's packed full of protein and fibre and a great way of using up courgettes!

Method

Preheat oven to 180 degrees, then line and grease an 8x4 loaf tin.

In a large bowl mix the grated courgette, eggs, paprika, olive oil and chopped jalapeños.

In a separate bow mix the coconut flour, baking powder, salt and pepper. Then add to the courgette mixture. 

Lastly mix the cheddar cheese in and pour mixture into the loaf tin and bake in the oven for 45 minutes, or until a knife comes out clean.

Leave to cool in the tin.
