Delicious Organic Fluffy Coconut Protein Pancakes
4 whisked organic eggs
1 cup almond milk
1 tsp. vanilla extract
1 tbsp. honey
1/2 cup of Good Stuff Coconut Flour
1 scoop of Good Stuff Whey Protein
1 tsp. baking powder
1/2 tsp sea salt
These delicious pancakes are such a healthy treat for breakfast, gluten free and packed full of protein to give you the perfect start to the day. We love them served with chopped banana and cacao nibs.
Mix eggs, milk, vanilla & honey in a bowl.
In a separate bowl mix coconut flour, baking powder, whey and sea salt.
Then stir wet mixture into dry until incorporated.
Grease a pan with coconut oil. Ladle a few tablespoons of batter into pan for each pancake. Spread out slightly with the back of a spoon. The pancakes should be 2-3 inches in diameter and fairly thick. Cook over a medium heat for a few minutes on each side - coconut flour browns very easily, so keep a watchful eye over them.
