Healthy Banana Loaf with Greek Yoghurt Frosting

Have you ever wanted a quick and simple recipe that makes you look like a baking Goddess? This recipe is a crowd-pleaser and is bound to impress friends and family of a weekend.


It’s packed full of fibre from the whole wheat flour, is sweetened naturally with honey and has an extra protein boost from our organic chia seeds! Oh, and if it wasn’t banana-y enough, we add a scoop of our organic banana powder too. The ‘frosting’ is an easy yoghurt-based variety with no sugar or butter in sight! Ingredients

For the loaf

75 ml rapeseed oil

115 ml honey

55 ml almond milk

1 cup mashed ripe bananas (about 2 ½ medium or 2 large bananas)

3 tsp baking powder

½ tsp salt

½ tsp cinnamon

1 tsp vanilla extract

245 g whole wheat flour

30g crushed walnuts

2 tbsp organic chia seeds

1 tbsp organic banana powder


For the frosting

200 ml full fat Greek yoghurt

1 tsp vanilla extract

2 tbsp granulated sweetener

Extra chia seeds and walnuts to garnish


Method

  1. Preheat oven to 165°C (or 145°C for fan assisted) and grease a loaf pan (the silicone ones work well!)
  2. In a large bowl, beat the rapeseed oil and honey together together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and almond milk.
  3. Add the baking powder, vanilla, salt, banana powder and cinnamon, and whisk to blend.
  4. Next, using a big spoon, stir in the flour until combined. Gently fold in the crushed walnuts and chia seeds.
  5. Pour the batter into the greased loaf pan.
  6. Bake for 60 minutes, or until a skewer inserted into the center comes out clean. Let the bread cool in the loaf pan for 15 minutes, then transfer it to a wire rack to cool for 25 minutes before topping.

To make the frosting

  1. Combine all ingredients together and whisk until the mixture thickens. Place in the fridge for at least 30 minutes (whilst the loaf is baking and cooling is ideal).
  2. Once the loaf if completely cooled, spread the mixture on top.
  3. Sprinkle with chia seeds and extra crushed walnuts.
  4. Slice to serve!
